Sweet and smoky barbecue rub

1 tsp fennel seeds

1 tsp smoked paprika

Finely grated zest and 2 tbsp juice of 1 small orange

Pinch dried thyme

1 tsp light soft brown sugar

Ground black pepper

1 garlic clove



  1. Put all the ingredients except the orange juice into a small blender, or a pestle and mortar, and crush them together.
  2. Stir in the orange juice to make a paste and spoon into an airtight container. Store in the fridge for up to a week.
  3. Perfect for rubbing over home-made beef burgers, corn on the cob, large Portobello mushrooms, whole mackerel or steaks of salmon or tuna before grilling or roasting.
