Put all the ingredients except the orange juice into a small blender, or a pestle and mortar, and crush them together. Stir in the orange juice to make a paste and spoon into an airtight container. Store in the fridge for up to a week. Perfect for rubbing over home-made beef burgers, corn on the cob, large Portobello mushrooms, whole mackerel or steaks of salmon or tuna before grilling or roasting.
