Spanish Pasta Fish

Spanish-style pasta with fish

Prep time: 15 minutes | Cooking time: 20 minutes, plus 5 minutes standing time


2 teaspoon olive oil

1 small onion, chopped

1 small green pepper, seeded and chopped

1 clove garlic, finely chopped

1 teaspoon paprika

227g (8oz) can chopped tomatoes

About 350ml (12fl oz) fish or vegetable stock, reduced-salt or home-made if possible

4 tablespoons dry white wine (or additional stock)

1 courgette, sliced

175g (6oz) skinless, boneless white fish fillets, cut into chunks

100g (3½oz) uncooked peeled king prawns

115g (4oz) chilled fresh penne pasta

2 tablespoons chopped fresh flat-leaf parsley

  1. Heat oil in a non-stick saucepan; add onion, green pepper and garlic and cook over a medium heat for 5 minutes.
  2. Stir in paprika; cook for 1 minute. Add tomatoes, stock and wine; bring to the boil. Stir in courgette, fish, prawns and pasta. Return to the boil; reduce heat, cover and simmer for about 8 minutes or until pasta is tender. Add an additional 50ml (2fl oz) hot stock, if desired.
  3. Remove from heat; let stand, covered, for 5 minutes before serving. Stir in parsley; serve with fresh bread to mop up the juices.
