Chicken shish kebabs

These subtly spicy chicken shish kebabs with tzatziki sauce are the perfect for a healthy summer evening meal.

  1. Cut the chicken into even-sized chunks and place it in a bowl with 1 crushed garlic clove, the lemon juice, spices and herbs.
  2. Leave to marinate for 15-30 minutes then thread on metal skewers alternating the chicken with the onion leaves and red pepper pieces.
  3. Grill for 10-12 minutes, turning the kebabs occasionally until the chicken is tender and no longer pink in the centre.
  4. To make the tzatziki, coarsely grate the cucumber, then place in a sieve and squeeze out all the juice. Tip into a bowl with the yogurt, mint and garlic. Serve with wholemeal flat breads and green salad leaves.

Cook's tip

  • The secret to a good kebab is marinating the chicken in some lemon juice and spices for at least 15 minutes to make it really juicy.

How we made it healthier

Using low-fat yogurt for the tzatziki means it is lower in saturated fat than traditional tzatziki which uses full fat yogurt. It still has plenty of flavour coming from fresh mint and garlic.

2 skinless chicken breasts

2 cloves garlic, crushed

2 tbsp lemon juice

1 pinch ground allspice

1 pinch ground cinnamon

½ tsp paprika

½ tsp dried oregano

1 red onion, quartered and divided into leaves

1 small red pepper, cut into large chunks

1 tbsp olive oil

For the tzatziki

¼ cucumber

150ml (5 fl oz) low-fat yogurt

a few leaves mint, finely chopped

1 clove garlic, crushed

2 wholemeal flat breads and green salad to serve
