Ackee and smoked mackerel

In this dish, the salty fish plays off the fruitiness of the ackee - the national fruit of Jamaica.

Cooking time: 10 minutes

  1. Heat the oil. Finely slice all the vegetables and cook until tender and then add the spices.
  2. Drain the ackee and add to the cooked vegetables, stirring very gently so as not to break the ackee. Cook for 3-5 minutes so that the ackee is heated through.
  3. Add the chopped tomato, freshly ground pepper and mackerel, then cook for a further 1 minute. Serve immediately.

2 beef tomatoes

1 large onion

2 cloves of garlic

1 sweet pepper

1 tablespoon vegetable oil

Freshly ground black pepper

Scotch bonnet to taste
