Yoghurt dressing

115g (4oz) 0% natural fat-free Greek yoghurt

2 tsp reduced-calorie light mayonnaise

25g (1oz) pickled gherkins, finely chopped

2 tbsp chopped fresh herbs such as parsley and chives

1 tsp of the pickled gherkin vinegar



Beat together all the ingredients until well blended. Cover and chill overnight.


Cook’s tips

  • Make this dressing the day before you want to use it to give the flavours a chance to blend together.
  • It's perfect to serve with grilled oily fish or chicken, spooned onto grilled tomatoes or as a dressing for roasted vegetables.
  • Stir in 1 tbsp skimmed milk and use the dressing as a dip with crudites or toasted strips of wholemeal pitta bread
