Patatas bravas

Try these crispy fluffy potatoes with a hint of smoky spice.

Cook: 45 minutes

  1. Heat the oven to 220°C/200°C fan, gas mark 6.
  2. Cut the potatoes into 3cm chunks, place in a large roasting dish drizzle with 2 tsp of the oil and sprinkle with 1 tsp paprika. Add 1 clove of garlic, toss with the potatoes and roast for 45 minutes until golden.
  3. Meanwhile, heat the remaining 1 tsp oil in a small frying pan and fry the onion or shallots on a medium heat for 10 minutes until really soft and tender.
  4. Add the remaining clove of garlic and fry for 1 minute then add the tomatoes and the second teaspoon of paprika. Simmer on a medium heat for 15 minutes until the mixture has reduced to a thick sauce. Stir it through the potatoes and serve hot.
