Garlic and lemon prawns with courgettes

This dish is fresh and light with plenty of flavour and a little hint of spice.

  1. Heat the oil in a frying pan and add the garlic, cook for 1 minute then add the courgettes and fry for 3 minutes or until lightly browned, then add the prawns and fry, stirring until they turn pink.  
  2. Add the chilli flakes, lemon juice and parsley and serve hot.

250g (8oz) shelled, raw king prawns

2 medium courgettes, thickly sliced

Pinch dried chilli flakes

Juice 1 lemon 

2 tbsp finely chopped parsley
