Menda puri (mathi)

225g/8oz self-raising flour

2 tablespoons olive oil

1 level teaspoon carom (ajwain) seeds

75-100ml/3-4fl oz water

  1. Mix all the ingredients to make a firm dough. Let the dough rest for 10 minutes.
  2. Pre-heat the oven to gas mark 3, 170°C (325°F).
  3. Knead the dough well and divide it into small balls.
  4. Roll each ball of dough into a 10cm/4in round, like a puri, and prick it all over with the tip of a knife.
  5. Bake in the oven for 10-15 minutes until lightly brown.
