Baked potato skins with salmon and soft cheese

Baked red cabbage with apple

250g (9oz) red cabbage, shredded

1 eating apple (about 175g/6oz total/unprepared weight), peeled, cored and sliced

3 round shallots, thinly sliced

4 tbsp unsweetened apple juice

1 tbsp red wine vinegar

2 tsp clear (runny) honey

Freshly ground black pepper, to taste

1 cinnamon stick

1 star anise

25g (1oz) toasted pine nuts, to serve (optional)

  1. Preheat oven to 170°C/150°C fan/gas mark 3. Put cabbage, apple and shallots in an ovenproof casserole dish.
  2. Combine apple juice, vinegar, honey and black pepper in a small bowl; pour into casserole and stir to mix. Tuck in cinnamon stick and star anise.
  3. Cover; bake in oven for about 1½ hours or until vegetables are cooked and tender, stirring once or twice.
  4. Remove from oven; discard whole spices. Stir in (or scatter over) pine nuts (if using). Serve hot or warm with baked potatoes for a light meal, or on its own to accompany a main dish.

Cook's tips

  • Swap a small red onion for the shallots. Try using medium or dry cider instead of the apple juice.
  • This is suitable for freezing.
