7 ways to cook with butternut squash

It’s autumn and squashes and pumpkins are all around. Here are seven delicious, simple, quick and tasty recipes for the humble squash. Perfect as the chilly autumn nights set in.

1. Butternut squash soup

What better place to start than with a classic butternut squash soup? This is a rich, thick soup with lots of flavour. This recipe can be frozen and enjoyed up to three months later as well.

2. Spicy squash and spinach soup

If you like your soup with a bit of a kick then this is the one for you. This hearty, warming soup can be enjoyed as a starter or with some crusty wholegrain bread to make a filling, heart-healthy main meal. You can also make a larger batch and freeze the soup for later date.

3. Spicy turkey and butternut squash fajitas

Butternut squash is so versatile. Roasted butternut squash makes for a great side dish, but if you’re going to spend the time peeling and chopping, why not roast a whole tray of veg that can then be turned into a pasta bake or tasty fajitas?

4. Butternut squash laksa

Have you ever tried laksa? This Malaysian favourite is a filling, aromatic soup. Here, we’ve given it  an autumnal  twist with butternut squash. It’s vegetarian, dairy-free and gluten free as it is, but you can add pieces of chicken or fish to add more protein to your meal.

6. Beef and butternut squash moussaka

This healthy moussaka with a butternut squash twist substitutes full fat cheese for low fat cheese, uses 5% fat mince meat, and low cal cooking spray to ensure that this moussaka is as healthy as it is delicious.
