Wholemeal chapati or roti

Also known as roti, chapatis are consumed daily with drier curries in northern India, and they are great to use as wraps too

Cooking time: 1 minute

  1. Place the flour and water in a large bowl and mix with a spoon.
  2. Wet your hands and knead the dough for 5 minutes until smooth. Cover and leave for 10 minutes.
  3. Knead again and divide the dough into 8-12 balls (depending on the thickness required) and roll out into circles 15cm/6in across.
  4. Heat a shallow frying pan. Once the pan is hot, add the chapati. Turn it after 10 seconds, and then cook the other side for 1 minute or until cooked. Then fluff up the chapati over direct heat, placing the less well cooked side over the heat for 30 seconds or until fluffed up and lightly brown.

Cook's tips

  • If you are cooking with gas you can do step 4 by holding the chapati with tongs over a moderate gas flame. If you are cooking with electricity, place a wire mesh over an electric hob. This helps the chapati to cook well and to remain soft. Serve immediately without spreading any fat.
