Thai green curry

This simple curry is one of Thailand’s hottest exports – literally! It’s packed with vegetables to reach your 5-a-day.

A bowl of Thai green curry and brown rice on a table.

Meal type: Main meal

Serves: 2

Total time: 21 minutes

Preparation: 10 minutes

Cook: 11 minutes

  1. Trim the lemongrass and remove any woody leaves from the outside and discard. Place onto a chopping board and bash with a rolling pin to break up the fibres and then roughly chop.
  2. Place into a food processor with the cumin, coriander, chilli, ginger, garlic, coriander, spring onions, lime zest and juice, and 4 tbsp water, and blend to a fine paste. You may need to scrap the mixture from the side of the processor bowl and whizz again.
  3. Heat the oil in a wok or large frying pan and fry chicken for 3 minutes. Add the carrot, mangetout, baby corn and white bulb of the pak choi and stir fry for 2 minutes.
  4. Mix the cornflour with the water and add to the wok with the curry paste and yogurt. Simmer over the lowest heat possible for 4 minutes.
  5. Stir in the pak choi leaves and simmer for 1 minute until wilted. Season with freshly ground black pepper and soy sauce if using. Serve immediately.

Cook’s tip

Serve with wholegrain rice or noodles. If you like it hot, use Thai chillies. For a milder version, use fat green chillies.

How we made it healthier

Ready-made curry pastes are often high in salt. This recipe gives flavour with plenty of fresh and dried spices instead.
