Lower-fat spiced chips

These deliciously spicy chips are much healthier than their fried counterparts, but just as flavoursome. Serve them alongside any Indian meal or with grilled meat or fish

Preparation time: 7 minutes

Cooking time: 17 minutes

  1. Pre-heat the oven to gas mark 4, 180°C (350°F)
  2. Slice the potatoes into 2cm/¾in thick chips. Blanch in boiling water for 2 minutes, then drain and return to the pan.
  3. Mix the oil, lemon juice and chilli powder. Pour this mixture over the chips, toss them in the pan and coat them evenly.
  4. Place on a non-stick cooking mat in a baking tray in the oven for 15-20 minutes.
  5. Turn the chips as necessary, until cooked and golden brown.
