Hilsa fish (illish)

450g/1 lb hilsa fish

1 1/2teaspoons turmeric powder

1 tablespoon rapeseed oil

1 medium onion, diced

1 teaspoon green chillies, crushed

3 whole green chillies, slit lengthwise

1 teaspoon cumin coriander powder

1 teaspoon English mustard powder (optional)

2 tablespoons coriander leaves, finely chopped

  1. Cut the fish into pieces and wash in cold water. Blot dry with kitchen paper, rub turmeric powder over the flesh and leave the fish in the fridge for 20 minutes.
  2. Heat the oil in a pan, add the diced onions and spices and sauté for 3 minutes. Turn off the heat and add the fish. Mix well until the fish pieces are well coated.
  3. Place a steamer over a pan of boiling water. Place the marinated hilsa into the steamer dish, and steam with a lid on for 10-15 minutes or until cooked and garnish with chopped coriander before serving.


  • Try using mackerel or salmon in place of the hilsa fish
