This satisfying West Indian dish is a great winter warmer

Brown stew chicken

Cooking time: 40 minutes

  1. Coat the chicken with garlic, soy sauce, the onion, black pepper, lime juice and scotch bonnet pepper. Marinate in the fridge for about 2 hours or overnight, if possible.
  2. Preheat oven to gas mark 6, (190C). Meanwhile, mix all the other ingredients and water in the chicken marinade.
  3. Cover with foil or a tight fitting lid and cook in the oven for 30-40 minutes, turning frequently.

6 chicken quarters, skin removed

1 carrot, peeled and diced

1 green or red pepper, finely sliced

250ml cup water

 

Marinade

1 tablespoon tomato puree

1 teaspoon coarsely ground black pepper

3 sprigs fresh thyme

1 tablespoon reduced-salt soy sauce

Juice of 1 lime

Scotch bonnet pepper, to taste

1 clove of garlic, crushed

2 large tomatoes, chopped

1 medium onion, chopped
