  1. Pre-heat the oven to 180°C/160°C fan/ gas mark 4.
  2. Toast the almonds in a dry frying pan until lightly browned. Watch carefully as they burn easily. Leave to cool.
  3. Place the bread, parsley and lemon zest in a food processor and blend until finely chopped. Add the almonds and tip the mixture onto a plate.
  4. Press the trout flesh side down onto the breadcrumb mixture. Place skin side down (so the breadcrumbs are on top) on a lightly oiled baking dish and press the remaining mixture over.
  5. Bake for 12-14 minutes until the fish is firm and the crumbs are lightly golden. Cut the lemon in half and squeeze over the fish.

Cook's tips

  • You can use toasted hazelnuts instead of flaked almonds-blend them into crumbs with the bread.

How we made it healthier

Trout is an oily fish which provides healthy omega-3 fats. The nuts in the crunchy topping add vitamins and minerals and using wholemeal bread for the breadcrumbs helps to add fibre to this dish.
