Mushroom fajitas

Our healthy mushroom fajitas are seasoned with garlic and spices.

Cooking time: 10 minutes

  1. Slice the mushrooms into 1cm-thick slices and place in a bowl with the lime zest and juice, garlic, chilli, paprika and oil. Toss together well and leave to marinate for 30 minutes.
  2. Meanwhile, place the drained beans, onion and thyme in a pan and heat, stirring for five minutes.
  3. Heat a large, non-stick frying pan and fry the mushroom slices for two to three minutes per side until softened.
  4. To serve, top each tortilla with some shredded little gem lettuce and diced tomato, a spoonful of cooked beans and a quarter of the cooked mushrooms. Serve hot, rolled up.

250g portobello or other large flat mushrooms

Finely grated zest and juice of 1 lime

1 clove garlic, peeled and crushed

1 red chilli, deseeded and finely chopped

¼ tsp smoked paprika

1 tsp rapeseed oil

400g-tin borlotti beans (235g drained weight)

1 small onion, peeled and finely chopped

3 sprigs fresh thyme

1 head little gem lettuce, shredded

1 medium tomato, diced

4 flour tortillas
