Mango and lime mousse

A decadent creamy, fruity treat to top off your meal.

  1. Cut the mango in half either side of the stone. Scoop out the flesh.
  2. Place in a food processor with the yogurt, lime juice and 1 mint leaf. Blend until smooth.  
  3. Divide the mango and yogurt mixture between 4 bowls. Decorate with lime zest and a mint leaf.

How we made it healthier

Replacing cream and full-fat yogurt for 0% fat Greek yogurt still gives a richness without the saturated fat.

2 ripe mangoes (around 350g prepared weight of flesh)

300g (10oz) 0% fat Greek yogurt or dairy-free unsweetened Greek style yogurt

Zest and juice ½ lime

5 mint leaves
