Braised pork chops with apples

Pork and apple are a classic combination, and this warming and hearty dish is perfect served with seasonal vegetables.

Cooking time: 1 hour 8 minutes

  1. Preheat oven to 180ºC/fan 160 ºC/gas mark 4. Heat oil in a non-stick frying pan. Add pork; cook over a medium-low heat until sealed all over. Transfer to an ovenproof casserole dish.
  2. Add shallots and mushrooms to frying pan; cook for 5 minutes. Add flour; cook gently for 1 minute, stirring. Slowly add stock and cider, stirring; add mustard and black pepper. Bring to the boil; continue stirring for 2-3 minutes or until thickened slightly.
  3. Place apple slices on pork; pour over sauce. Cover and cook in oven for 45-60 minutes or until pork is tender. Serve with boiled new potatoes and plenty of vegetables. Sprinkle with the fresh thyme leaves before serving, if you have them.

1 teaspoon sunflower oil

2 lean boneless pork chops (fat removed) or lean boneless pork loin chops or steaks (about 150g/5 1/2oz each)

2-3 shallots, thinly sliced

85g (3oz) mushrooms, sliced

2 teaspoons plain flour

100ml (3 1/2fl oz) vegetable stock

4 tablespoon dry cider (or apple juice)

1 teaspoon wholegrain mustard, or to taste

1 large eating apple, peeled, cored and thickly sliced

1 tsp fresh thyme leaves, to garnish (optional)
