Barbecued mackerel with spices

  1. Light barbecue about 30-45 minutes before you want to start cooking.
  2. In a bowl combine orange zest, orange juice, olive oil, ground spices, garlic and black pepper; whisk together.
  3. Make 3 deep cuts in each side of each fish. Rub spice mixture over fish and into the cuts.
  4. Place fish on rack over barbecue; cook for 5-6 minutes on each side or until flesh is firm, opaque and skin is slightly charred, turning once. Garnish and serve.

Cook's tips

  • When barbecuing, the coals are hot enough when they are glowing red and covered with a thin layer of white ash.

1 teaspoon finely grated orange zest

1 tablespoon freshly squeezed orange juice

2 teaspoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon hot chilli powder (optional)

1 clove garlic

Freshly ground black pepper, to taste

2 whole fresh mackerel (each about 280-350g/10-12oz unprepared weight), gutted and cleaned

Small orange wedges and chopped fresh parsley, to garnish (optional)
