These succulent salmon steaks suffused with Indian spices are special enough for entertaining, yet practical for a quick evening meal

Cooking time: 30 minutes

  1. Mix the lemon juice, pepper and cumin coriander powder. Spread this mixture on both sides of the salmon steaks. Leave for 1-2 hours in the fridge.
  2. Heat the oil and fry the onions until soft. Add the garlic, ginger and green chillies and continue to cook for 2 minutes.
  3. Spread the mixture on each side of the fish and grill under a pre-heated grill for 15-20 minutes, turning occasionally, and basting with the marinade.
  4. Garnish with coriander.

Cook's tips

  • This dish can also be cooked in the oven. After spreading the mixture over the fish, place in an ovenproof dish, cover with foil and cook at gas mark 5, 190°C (375°F) for 20-30 minutes.
