Potato salad with flaked mackerel

280g (10oz) waxy small salad potatoes

115g (4oz) green beans, trimmed

2 tablespoons olive oil

2 teaspoons unsweetened orange juice

1 teaspoon white wine vinegar

1 teaspoon wholegrain mustard, or to taste

1/4 teaspoon finely grated orange zest

1 tablespoon snipped fresh chives

Freshly ground black pepper, to taste

35g (1 1/4oz) small watercress sprigs

4 spring onions, finely chopped

125g (4 1/2oz) can mackerel fillets in brine, rinsed, drained and flaked

  1. Bring potatoes to the boil in a pan of water. Cook for 12-15 minutes, adding green beans for the last 5 minutes, until both are tender. Drain well; refresh under cold running water and drain again thoroughly. Set aside to cool completely.
  2. Whisk together oil, orange juice, vinegar, mustard, orange zest, chives and black pepper in a small bowl.
  3. Put cold potatoes and beans in a serving bowl. Add watercress, spring onions and mackerel; toss gently. Give dressing a whisk; drizzle over salad. Toss gently again and serve.
