Mango and pear cobbler

2 ripe mangos, cubed

2 cans pears in juice, drained

150g plain flour, sifted

100g oats

30g sunflower margarine

2 large eggs, beaten

200ml skimmed or soya milk

1/2 teaspoon baking powder

4 tablespoons brown sugar

1 tablespoon mixed spice

  1. Gently cook the fruit with a few tablespoons of water, half the sugar and mixed spice. When soft, leave to rest in a casserole dish or deep baking tray.
  2. Rub margarine into flour and oats. Stir in the remaining spices and sugar. Slowly add the milk to form soft dough.
  3. Spoon the dough on top of the fruit and bake for 30 minutes at 190C (gas mark 5). Serve hot with custard or ice cream.
