500g/1lb 2oz quark

3 tablespoons icing sugar

400g/14oz half-fat crème fraîche

A pinch of saffron

1 teaspoon skimmed milk

1 teaspoon almonds, thinly sliced

1/2 teaspoon pistachio nuts, sliced

1/4 teaspoon cardamom seeds, crushed

  1. Whisk the quark with the icing sugar and fold in the crème fraîche.
  2. Mix the saffron in a teaspoon of hot milk and add to the mixture.
  3. Transfer into a serving bowl. Sprinkle the top with the almonds, pistachio nut slices and cardamom seeds.
  4. Keep in the fridge for a few hours before serving.

Cook's tips

  • This dessert is delicious mixed with chopped mangoes, strawberries, seedless grapes or pomegranate seeds.
