Herbed turkey burgers

Category: Main meal | Serves: 4 (makes 8 medium burgers)

Prep time: 20 minutes, plus 30 minutes chilling time | Cooking time: 20 minutes

500g (1lb 2oz) turkey breast mince

1 red onion, coarsely grated

1 small courgette, coarsely grated

1 red pepper, deseeded and diced

2-3 tbsp finely chopped fresh mixed herbs (such as parsley, thyme and oregano)

1 tsp finely grated lemon zest

Freshly ground black pepper, to taste

1 tbsp sunflower oil, for brushing

  1. Place all ingredients, except sunflower oil, in a large bowl and mix together. Using your hands, shape mixture into 8 round flat burgers, each about 1.5cm (5/8in) thick. Place burgers on a plate, cover with cling film and chill for 30 minutes.
  2. Preheat grill to high (or light barbecue about 30-45 minutes before cooking, or if it's a gas barbecue, about 10 minutes before).
  3. Lightly brush burgers all over with sunflower oil. Place on rack in grill pan (or over barbecue); grill for 15-20 minutes, until burgers are thoroughly cooked, turning once or twice. (Grill burgers about 8cm / 3 1/4in from heat). Cooking time will vary according to method used.
  4. Serve burgers in baps with sliced tomatoes, salad leaves and relish or mango chutney.

Cook's tips

  • Lean minced pork or chicken can be used instead of turkey.
  • Replace lemon zest with 1 finely chopped de-seeded fresh red chilli and 1-2 cloves crushed garlic, if you like.
