Category: Snack/side dish, Starter/snack | Serves: 2

Prep time: 10 minutes, plus 20 minutes’ infusing time | Cooking time: 10 minutes

3 tablespoons olive oil

1 clove garlic, crushed

2 teaspoons finely chopped fresh flat-leaf parsley

1/2 teaspoons finely grated lemon zest

Freshly ground black pepper, to taste

4 portabello or field mushrooms (250-280g/9-10oz total weight)

2 good-sized slices of ciabatta bread

Additional chopped fresh flat-leaf parsley, to garnish (optional)

  1. Combine 2 tablespoons olive oil with the garlic, parsley, lemon zest and black pepper in a small bowl; set aside to infuse for 20 minutes.
  2. Preheat grill to medium-high. Lightly brush base of mushrooms with remaining oil; grill, gill-side down, for 5 minutes.
  3. Turn mushrooms gill-side up. Brush with garlic oil mixture; grill for 3-4 minutes or until mushrooms are tender and sizzling. Meanwhile, toast ciabatta slices in toaster.
  4. Serve mushrooms on top of ciabatta toast; drizzle with any escaped juices. Garnish with parsley, if desired.

  • Try serving mushrooms on wholemeal or granary toast instead of ciabatta.
