Baked spiced peach with raspberries

1 large ripe peach (about 165g/5 3/4oz unprepared weight)

1/2 tsp finely grated lemon zest

Ground cinnamon, for sprinkling

2 tsp of runny honey

55g (2oz) fresh raspberries, at room temperature

1 tbsp low-fat natural Greek-style yoghurt, to serve

  1. Preheat oven to 180ºC/160ºC fan/gas mark 4. Remove skin from peach. If skin does not peel off easily, briefly dip peach in boiling water (for 20–30 seconds) and drain; skin should now slide off easily. Cut peach in half and twist to separate halves; remove stone.
  2. Place peach halves, cut-side up, in a small ovenproof dish. Scatter lemon zest over peach halves; sprinkle with a little cinnamon. Drizzle honey over peach halves.
  3. Cover with foil; bake in oven for about 20 minutes or until peach is hot and tender. About 5 minutes before end of cooking time, scatter raspberries over peach halves, if you like; re-cover with foil and then continue baking briefly, or simply serve the raw raspberries scattered over hot peach just before serving. Serve with yoghurt.
