Baked citrus cod with fresh herbs

Finely grated zest and juice of lime 1/2

1 tablespoon of freshly squeezed lemon juice (about juice of 1/2 small lemon)

2 teaspoons of olive oil

1 teaspoon of clear (runny) honey

1 1/2 teaspoons chopped fresh tarragon

1 1/2 teaspoons chopped fresh parsley

Freshly ground black pepper, to taste

2 cod steaks (about 175g/6oz each)

  1. Preheat oven to 200ºC/fan 180ºC/gas mark 6. Put lime zest and juice, lemon juice, oil, honey, chopped herbs and black pepper in a small bowl; whisk together until thoroughly mixed.
  2. Place cod steaks in an ovenproof dish; pour over lime mixture. Cover dish loosely with foil (make sure foil does not touch fish). Bake for 20 minutes or until fish is cooked, tender and flesh is just beginning to flake.
  3. Serve with steamed carrots and green beans.


  • Small halibut steaks can be substituted for the cod steaks.

  • Choose fresh fish such as cod from sustainable sources where possible.
