Roasted pepper mayo

Prep time: 15 minutes | Cooking time: 30 minutes

  1. Heat oven to 220°C/200°C fan/gas mark 7. Put onion, red pepper and garlic in a small roasting tin and drizzle over the oil. Stir well and roast for 20–30 minutes or until the onion and pepper are soft and golden and the garlic very soft. Stir in the basil in the last 10 minutes of cooking time. 
  2. Leave the mixture to cool then blend (or finely chop) with the fromage frais to a puree. Fold in the mayonnaise with a large metal spoon, cover and chill.

Cook’s tip

  • Use this smoky pepper mayonnaise with any grilled barbecued meats or fish (such as fresh tuna or mackerel). It will keep in the fridge for 2–3 days.
