Jamaican Jerk Prawns

Prawns with Jamaican jerk marinade

Ingredients

1 inch piece of ginger, peeled

4 stems of spring onion

2 tablespoons pimento seeds

2 scotch bonnet peppers, to taste

3 cloves garlic

1 tablespoon brown sugar

1 teaspoon black pepper

1 teaspoon mixed spice

3 tablespoons olive or rapeseed oil

Handful fresh thyme

1 lime zest and juice

200g peeled uncooked prawns

  1. Blend all the ingredients except the oil and lime juice using a hand blender or food processor.
  2. Once the ingredients have combined into a thick paste, mix in the oil and lime juice.
  3. Rub the marinade over the prawns. Leave to marinade for 1 hour, then grill or barbecue over a medium heat, turning regularly. If you want, place the prawns on a skewer to make it easier to turn under the grill. (Skewering each prawn twice, once through the head and once near the tail, will give them an attractive curved shape.) The cooking time will be about 5 to 7 minutes depending on size - the prawns will be done when the whole of the outside has changed colour to pink.
