Easy Sunday rice

Ingredients

1 tin kidney beans/red peas

750ml (25fl oz) water

100g (3½ oz) frozen mixed vegetables

2 sprigs fresh thyme

20g (½ oz) coconut cream

1 bay leaf

1 spring onion

1 tsp cumin powder

1 clove garlic, finely chopped

1/2 teaspoon all-purpose seasoning

1 red pepper, deseeded and diced

200g (7oz) basmati rice, uncooked

  1. Put the beans in a large pan, which has a tight fitting lid, and add the water. Then add all the other ingredients, except the rice, and bring to the boil.
  2. Rinse the rice in warm water before adding to the pot. Stir well.
  3. Cover the pan and simmer for a further 20-30 minutes or until all the liquid has been absorbed and the rice is cooked. You may need to add more liquid to soften the rice.
