Preheat oven to 180ºC/160ºC fan/gas mark 4. Remove skin from peach. If skin does not peel off easily, briefly dip peach in boiling water (for 20–30 seconds) and drain; skin should now slide off easily. Cut peach in half and twist to separate halves; remove stone. Place peach halves, cut-side up, in a small ovenproof dish. Scatter lemon zest over peach halves; sprinkle with a little cinnamon. Drizzle honey over peach halves. Cover with foil; bake in oven for about 20 minutes or until peach is hot and tender. About 5 minutes before end of cooking time, scatter raspberries over peach halves, if you like; re-cover with foil and then continue baking briefly, or simply serve the raw raspberries scattered over hot peach just before serving.
