Pippa Middleton's top 10 heart-healthy recipes

BHF ambassador Pippa Middleton has revealed her top ten recipes from her new cookbook Heartfelt:

1. Asian tuna with avocado salsa

Pippa says: “This is a brilliantly zingy and refreshing dish rich in omega-3 as it uses fresh tuna. Try to find large tuna steaks with deep purple flesh.”

2. Prawns with Thai-spiced broad beans and wild rice 

Pippa says: “Easy to prepare and full of flavour, this Thai-spiced wild rice is a wonderful accompaniment to tiger prawns. Broad beans are a good source of protein, carbohydrates, vitamins and minerals, and brown rice adds fibre. A satisfyingly nutritious dish that makes rice incredibly tasty.”

3. Rhubarb and custard semifreddo  

Pippa says: “I love these classic English flavours with an Italian twist. Low-fat custard and yoghurt are an equally delicious but heart-healthy alternative to standard semifreddo or ice-cream.”

4. Halibut with roast tomato and herb dressing

Pippa says: “Halibut is a delicious white fish with large flakes and a firm but tender texture. It's best cooked on the bone to help seal in the flavoursome juices. The tangy tomato dressing sets it off perfectly, while home-pickled onions add a bit of texture.”

5. Spiced Black Forest crumble

Pippa says: “Incredibly comforting, but healthier than traditional crumble. Adding wholegrain oats to the topping makes this higher in fibre. Serve hot or cold with a dollop of thick, low-fat yoghurt or a little frozen yoghurt on the side and chopped mint on top.”

6. Portobello mushroom margherita

Pippa says: “Every member of the family will love this quirky take on a traditional pizza. It's great for brunch, breakfast or as a substantial snack, and the portobello mushrooms make it a tasty way to up your family’s veg intake.”

7. Rainbow pepper steak fajitas

Pippa says: “The Baharat spice mix in these spicy and colourful steak fajitas (a blend of paprika, coriander, black pepper, cumin, cinnamon, cayenne pepper, cloves, nutmeg, cardamon) has a delicious taste without the added salt that’s in many pre-mixed spice blends. Choose a lean cut of meat for lower saturated fat and you have the perfect fast, healthy meal.”

8. Berry roulade

Pippa says: “If you’re celebrating, this is a treat that everyone can enjoy. Better still, it’s quick to prepare – just ensure you let it cool before adding the filling.”

9. Meatballs with tabbouleh

Pippa says: “Give the classic Middle-Eastern tabbouleh a makeover with this super-speedy yet healthy midweek meal. If you love the original, I think you’re in for a treat.”

10. Berry and elderflower tarts

Pippa says: “The light and fragrant flavour of elderflower always reminds me of British summertime, especially when combined with seasonal berries. Filo pastry has an impressive finish and crunchy crust, while being lower in fat and saturated fat than shortcrust, puff or flaky pastry.”
